1 pound liver – beef or chicken
½ cup water
2 eggs
1 cup corn meal
1 cup all-purpose flour
1 tablespoon garlic powder


Preheat the oven to 350 degrees.


Put the liver, water, and eggs – shells and all, if you like – in a food processor and puree.  Add the corn meal, all-purpose flour, and garlic powder.  Mix well.  Pour the batter into a greased loaf pan.  Bake for 45 minutes.  Cool.  To serve, slice the loaf into 1-inch-thick slices, and then cut the slices into smaller squares.  Let the slices air dry for up to 24 hours.  Store in an airtight container in the refrigerator or freezer.
